They agreed with me and changed the board but as they did not have any gigabyte motherboard chipset ga-ex58-ds4 the same model left to exchange I ended up with the GA-EXUD5. All up and running and it is flying, I didn't think it was possible to install OS that fast! This may be a red herring or could be a contributory factor to the fault?

Something is wrong there if only the time was wrong and all the other settings were still the same unless of course you were only using the default settings. If this is not the case I would suggest that you do an gigabyte motherboard chipset ga-ex58-ds4 CMOS gigabyte motherboard chipset ga-ex58-ds4 and make sure that all power to the board is disconnected. What I meant was that all the drives were already present and configured, HDD priority the same as before CMOS clear and settinsg seemed already to be at the Optmised preset.
If all else fails I always here about 3 way SLI and 2 way crossfire or 4 way crossfire via 2 x2 cards but have heard nothing about 3 way sli. The maximum number of products that can be compared is 4.
